Today we will meet Robert Caparella owner and chef of La Scala Fine Dining Italian in Randolph! They are celebrating 50 years in the business in 2020! You have probably been there for many special occasions yourself anniversaries, birthday, first date and even engagements.
He brought his grandmother Anna’s recipes to La Scala when he opened it, from the North End Restaurant where he learned to cook and to this day they are used for many of the four to six daily specials on the blackboard at the entrance to the restaurant.
The restaurant is located on Route 28 in Randolph just a short drive from Route 128 exit. La Scala’s main dining room is intimate and quiet, and the tablecloths and napkins are actual cloth.
While we are in these crazy times they are doing they are doing takeout- and family meals to go!
When did you become interested in cooking?
I learned from my grandmother at 12 years old at her restaurant Mother Anna’s in Boston’s North End
What was your first restaurant job?
Mother Anna’s Restaurant North End Boston
What culinary training do you have?
No formal culinary training.As previously mentioned I was trained by my grandmother at her restaurant in the North End. Additional training at Locko Ober and Joseph’s Restaurants Boston

I opened La Scala restaurant in Randolph in 1970. 2020 we celebrate our 50th year in business which we are very excited about!

Garlic
What tool of the trade could you not live without?
(other than a knife)
my chef’s spoon! I’ve been using the same one for 50 years!
What is your current specialty of the house?
Various pasta dishes

Chicken Parmigiana
