Chef Series with Noy Geragosian of Lime Leaf Thai Restaurant South Weymouth MA
What goes on behind the scenes of a restaurant, what inspired your favorite chef or owner to get into the restaurant business! What’s their favorite tool and what do they LOVE for comfort food!
Today we meet Noy Geragosian the chef and owner of family-friendly cozy Lime Leaf a Thai restaurant in South Weymouth. They proudly offers fresh, flavorful Thai dishes, blending classic, modern, and fusion styles. With over 10 years of dedication, the restaurant prioritizes high-quality food and excellent customer service in a cozy, family-friendly setting.
When did you become interested in cooking?
I’ve actually cooked here and there since I was young, helping my mom cook for our large family in Thailand. I was essentially her assistant, but I got to taste her food most of the time; I believe I have a really good palate.
I got chance to cook more after moving to the US 13 years ago. Cooking for myself and my roommates gave me a chance to do my own cooking experiment, so my skills developed from there. And I enjoyed it more and more.
What was your first restaurant job?
Server 13 years ago, believe it or not my first server job was at this restaurant Lime Leaf with the previous owner.
What culinary training do you have?
I have no formal culinary training. I learned from my grandmother and mother from a young age. It’s a skill I’ve absorbed throughout my life, and I’m still learning every day.
How long have you been a chef/ owner?
Around 5 years now.
What ingredient could you not live without?
I wanted to say “Thai chili,” but there is something more special called “Sam-Kler” in Thai, “triple friends” if translated into English. It’s a combination of garlic, whole black or white pepper, and cilantro roots. You smash them together and use it for everything—marinades, stocks, stir-fries, and more. It elevates the aroma of your dish and helps activate your palate. It’s magical; please try it!
What tool of the trade could you not live without?
(other than a knife)
Mortar. Thai people, from the past until today, still use mortars to create the most delicious food.
What is your current house specialty?
Other than Pad Thai, I would say “Gaprow Spareribs”—you cannot find it anywhere else.
What is your biggest selling item?
The biggest seller main dish is Pad thai
The best seller appetizer Crab Rangoon
Do you cook at home?
Yes! Now homemade baby food mostly, haha. I’m the expert on baby food now!
What is your personal favorite comfort food?
The classic comfort Thai street food called “Pad Krapow chicken over rice with a sunny-side-up egg on top” yummy! 😋

What a delightful find! The atmosphere was warm and inviting, perfect for a relaxing meal. The food was incredibly fresh, with plenty of delicious gluten-free options. The friendly and attentive ladies running the restaurant made the experience even better, offering helpful suggestions to make every bite enjoyable.
I’ve ordered takeout from here several times, and it’s always spot-on! My go-to favorites are the chicken wings, pad Thai, and pineapple fried rice. Everything is consistently fresh, high-quality, and served piping hot—absolutely delicious!
If you’re searching for the best Thai food on the South Shore, Lime Leaf Cuisine is a must-try! I discovered this hidden gem five years ago, and it’s been my family’s go-to ever since. With consistently fantastic dishes and unbeatable flavors, it stands out among other local Thai spots. Trust me—you won’t be disappointed
Top-notch Thai food on the South Shore? Lime Leaf Cuisine stands out from the rest! Known for its cozy, quaint ambiance and bustling takeout service, it delivers consistently excellent dishes. Don’t miss their must-try Crispy Pad Thai—a flavorful favorite!
I finally stopped by this cozy restaurant after driving past it countless times, and it exceeded expectations! The food was exceptional, from a crispy tempura appetizer to a rich honey-glazed duck dish with perfectly cooked vegetables. My dining companion’s seafood entrée was equally delicious. Seating is limited, so call ahead for large groups—tables filled up quickly during our visit. Judging by the steady stream of takeout orders, their takeout game is just as strong. Can’t wait to return and explore more of the menu!
