When did you become interested in cooking?

I became interested in cooking when I was 13. My mother was a manager at a restaurant and they needed help in the kitchen that day. After the first day there, I fell in love with it!

What was your first restaurant job?

My first restaurant I worked at was a steakhouse called Hereford House on Cape Cod. It had a grill in the middle of the dining room and you picked out what cut of meat you would like.

What culinary training do you have?

I went to Johnson- Whales University for culinary arts. I also have worked all over the country. I was classically trained by alot of great chefs.

How long have you been a chef/ owner?

I have been a chef for quire some time, but I have only been an owner for 5 years now.

What ingredient could you not live without?

I could not live without seafood. Growing up on Cape Cod, seafood was everywhere. Everything from octopus to scallops. Now with seafood from all over the world, there is some great dishes to be made!

What tool of the trade could you not live without?
(other than a knife)

I could not cook without my spoons! I use a spoon for everything from basting to decorating plates with my spoons.

What is your current specialty of the house?

We come out with creative specials each week. Those are always our top sellers. A few examples include: Tomahawk Steaks, Grilled Norwegian Salmon, Seafood Fra Diablo and much more!

Do you cook at home?

Yes I cook at home! My wife and two daughters always are waiting for me to cook. Plus it is an expression of love when your family is amazed with something you created. I look in a fridge and see endless possibilities, and YES- I always have a spoon in my hand.

What is your personal favorite comfort food?

My favorite meal is short ribs with mashed potatoes with lots of cream and butter!

Here is some of the Swampie buzz

Went to Station 8 in Marshfield last night to celebrate our anniversary. It was not very busy when we got there around 6 so we were a little nervous that maybe it wasn’t great. Boy were we wrong!
We started with the calamari and peppers – fried calamari was very tender and not too chewy and it just had a very light batter on it. There were also fried banana peppers that were delicious and it came with a spicy aioli and a marinara sauce. My husband got lobster mac and cheese. He said the sauce was very tasty and there were a lot of large chunks of lobster. I got chicken parm and decided to get it with asparagus and mashed potatoes instead of pasta. All very flavorful, cooked perfectly and large portions. I had so much leftover I will have plenty for lunch today.
Our server was very good. Cheerful and attentive. I forget her name though. I also loved the decor. Sort of a rustic industrial look. I’m weird and even took a picture of the bathroom sinks because they were very cool looking.

I have heard great things about Station Eight in Marshfield from this group  , and finally had the opportunity to get out there from the Cape this afternoon. I met some ladies who were around the corner at the fairgrounds for the Levitate music festival this weekend.
the food? excellent. we had two huevos rancheros, an avocado toast, and a seasonal special eggs Benedict. I had to tweak my huevos order to avoid deep fried potatoes for an allergy with comingled fryer oil, np.  So, thank you, Station Eight and  today was great, and I will absolutely be back when I am in the area again.

Station Eight tonight in Marshfield.  Not a single complaint from anyone except for the fact that they were out of the Station Eight Cake.    I picked this place tonight for my birthday dinner throughout the meal i was told that this was such a great choice by everyone in our party.
Lovely atmosphere, had a 5:30 reservation not busy at all. server was very friendly and answered all questions.
1. Short rib quesadilla- caramelized onions, jalapeno, cheddar, sour cream, salsa, guacamole
2. Special of the night- rib eye with mashed, broccoli and a red wine reduction
3. Mediterranean turkey burger- ground turkey, spinach, feta, leaf lettuce, vine ripened tomato, tzatziki on a brioche roll with parm truffle fries- just the right amount of truffle.
4. Fig rustico- fig jam. prosciutto, spinach, fire roasted peppers, goat cheese, aged balsamic drizzle, house cheese blend
5. grilled marinated steak tips with broccoli and sweet potato fries

Enjoyed a wonderful dinner at Station 8 last night! We arrived early for our reservation, and had one missing from our party. The hostess happily seated us. Our waitress Joan came right over, and said “I can see you’re waiting for one more…I’ll bring some water and just let me know when you’re ready.” Our friend arrived a few minutes later and Joan quickly returned to take our drink order. Drinks were prompt and delicious. I had a Reisling that was awesome!! Wish I read the name fully because I want more!! 😂
A few minutes later Joan returned and took our appetizer order, telling us to take our time ordering meals (we were celebrating one friends birthday and so she was opening cards and we were all chatting away). We shared the bruschetta…it was hands down my favorite from any place I’d ever had it!! Came with soft, grilled bread, a delicious tomato and olive spread, evoo, pesto and balsamic glaze and you assemble yourself. I did wish more bread came with, but Joan was quick to bring extra warm rolls for us to polish it off.
Eventually we ordered dinner. I ordered steak tips medium with whipped potatoes and baby spinach. They had like 5-6 veggie options which was great! One friend had tips as well with whipped potatoes and broccoli rabe, and the other friend had the margherita flat bread and Caesar salad. My tips were amazingly tender and flavorful (and perfectly cooked!!), potatoes were creamy and delicious and the spinach was perfectly sautéed and seasoned. We were all very happy with our meals!
Finished off dinner with dessert…I had a to die for crime brûlée and the birthday girl had the same. Joan and another waitress brought out dessert with a candle and tiny happy birthday sign on my friends dessert which was nice. Our other friend had chocolate cake which she oohed and aaahed over.
Honestly, I can’t wait to go back. There were so many tasty options on the menu. Was a super fun evening and Joan was by far the best waitress I’ve had in quite a while. She never rushed us, offered suggestions, and was very personable and sweet. Great experience overall. — at Station Eight.
